A variety of thinly sliced vegetables such as: zucchini, broccoli, carrots, peppers, mushrooms, and purple onions - pick your favorite combination
Instructions
Preheat oven to 400
Bring a pot of water to boil.
Cook the noodles according to the package instructions, then drain and toss them with a splash of Portobello and Thyme EVOO. Set aside
Cut up vegetables and kielbasa and toss with a drizzle of Portobella and Thyme EVOO and spices
Put the vegetables and kielbasa on a cookie sheet an bake approximately 30 minutes
While the veggies are cooking, place the ramen noodles on a cookie sheet. Place in the oven the last 10-15 minutes of veggie cooking time until crisp, stirring after 5 minutes
Remove both trays from oven
Toss both veggies and noodles with Unagi Sauce
Place ramen noodles n a large platter and top with vegetable mixture
Sprinkle with sesame seeds and chopped green onions
