LTO Rainbow Vegetables with Crispy Ramen
Ingredients
- 1 pkg Kyunu Just Noodles Ramen noodles *
- Portobello and Thyme EVOO *
- Salt Sisters Pink Himalayan Mineral Salt *
- 1/4-1/2 cup Unagi Sauce *
- 1 Kielbasa Sausage thinly sliced
- 1/2 tsp Burlap and Barrel Sun Dried Tomato Powder *
- 1/2 tsp Burlap and Barrel Flowering Hyssop Thyme *
- Chopped green onions
- 2 tsp sesame seeds
- A variety of thinly sliced vegetables such as: zucchini, broccoli, carrots, peppers, mushrooms, and purple onions – pick your favorite combination
Instructions
- Preheat oven to 400
- Bring a pot of water to boil.
- Cook the noodles according to the package instructions, then drain and toss them with a splash of Portobello and Thyme EVOO. Set aside
- Cut up vegetables and kielbasa and toss with a drizzle of Portobella and Thyme EVOO and spices
- Put the vegetables and kielbasa on a cookie sheet an bake approximately 30 minutes
- While the veggies are cooking, place the ramen noodles on a cookie sheet. Place in the oven the last 10-15 minutes of veggie cooking time until crisp, stirring after 5 minutes
- Remove both trays from oven
- Toss both veggies and noodles with Unagi Sauce
- Place ramen noodles n a large platter and top with vegetable mixture
- Sprinkle with sesame seeds and chopped green onions
