Preheat oven to 375 degrees then line a baking sheet with parchment
Dice bacon, cook until crisp, then remove from skillet and set aside. Remove all but 1 TBSP drippings from the skillet and discard
Peel, core and finely chop the apple then add to the skillet. Saute 4-5 minutes over medium heat or until the apples are tender, stirring frequently
Reduce the heat to low, then fold the Pepper Jam into the apples and cook one minute
Place the phyllo cups (shells) onto the baking sheet. Remove the rind from the Brie and cut into 15 cubes, about 1/2' in size so that they fit into the cups
Add the cheese to the cups and then top with about 1 rounded teaspoon of the apple filling
Place 1-2 pieces of bacon on top of each and bake 8-10 minutes or until the cups are lightly golden. Serve warm
