Apple Bacon Bites
Ingredients
- 2 slices Bacon, cooked to crisp
- 1 large Granny Smith apple, peeled, cored and diced
- 1/3 cup Bacon with Peppers Jam
- 1 box Phyllo Cups (shells) 15 count
- 4 oz Brie Cheese
Instructions
- Preheat oven to 375 degrees then line a baking sheet with parchment
- Dice bacon, cook until crisp, then remove from skillet and set aside. Remove all but 1 TBSP drippings from the skillet and discard
- Peel, core and finely chop the apple then add to the skillet. Saute 4-5 minutes over medium heat or until the apples are tender, stirring frequently
- Reduce the heat to low, then fold the Pepper Jam into the apples and cook one minute
- Place the phyllo cups (shells) onto the baking sheet. Remove the rind from the Brie and cut into 15 cubes, about 1/2' in size so that they fit into the cups
- Add the cheese to the cups and then top with about 1 rounded teaspoon of the apple filling
- Place 1-2 pieces of bacon on top of each and bake 8-10 minutes or until the cups are lightly golden. Serve warm
