Mediterranean Olive Oil Stuffing (lemon, feta and herbs)
Ingredients
- 12 cups rustic bread cubes
- 1/2 cup Lemon EVOO
- 1 onion diced
- 3 cloves garlic minced
- 1 cup chopped spinach
- 1/2 cup kalamata olives, sliced
- 1/2 cup crumbled feta
- 1-2 TBSP chopped fresh oregano or parsley
- 2-3 cups broth
- salt and pepper
Instructions
- Saute onion, garlic and spinach in lemon olive oilToss with bread cubes, olives, feta and herbsAdd broth until moistened and bake 350 for 35-40 minutes
