Mediterranean Olive Oil Stuffing (lemon, feta and herbs)

Ingredients
  

  • 12 cups rustic bread cubes
  • 1/2 cup Lemon EVOO
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 cup chopped spinach
  • 1/2 cup kalamata olives, sliced
  • 1/2 cup crumbled feta
  • 1-2 TBSP chopped fresh oregano or parsley
  • 2-3 cups broth
  • salt and pepper

Instructions
 

  • Saute onion, garlic and spinach in lemon olive oil
    Toss with bread cubes, olives, feta and herbs
    Add broth until moistened and bake 350  for 35-40 minutes
