Antipasto Skewers
Ingredients
- 1 9 oz package refrigerated cheese Tortellini
- 40 Olives
- 40 Cherry Tomatoes
- 40 Mozzarella balls
- 40 Cantaloupe pieces, cubed
- 40 thin Slices Pepperoni
- 20 thin slices hard salami, halved
- 1/2 cup Aged Balsamic
- 1/2 cup Garlic EVOO
Instructions
- Cook Tortellini according to package directions. Drain and rinse in cold water
- In a large bowl, combine tortellini, olives and EVOO. Toss to coat. Cover and refrigerate 4 hours or overnight
- Drain mixture, discarding marinade,. For each appetizer, thread a folded pepperoni slice, a tortellini, a folded salami piece, an olive, a tomato, a mozzarella ball and cantaloupe. Drizzle with Aged Balsamic.
