Southwest Olive Oil Cornbread Stuffing

Ingredients
  

  • 8 cups Cornbread, cubed
  • 4 cups crusty bread cubes
  • 1/3-1/2 cup Tex Mex EVOO
  • 1 onion diced
  • 1 bell pepper, diced
  • 1-2 jalepenos, minced (optional)
  • 1 TBSP chili powder (optional)
  • 2-3 cups chicken or veggie broth
  • salt and pepper

Instructions
 

  • Saute onions and peppers in Tex Mex EVOO
    Add spices and cook one minute
    Combine with cornbread and bread cubes
    Add broth and bake 350 for 30-35 minutes
