Southwest Olive Oil Cornbread Stuffing
Ingredients
- 8 cups Cornbread, cubed
- 4 cups crusty bread cubes
- 1/3-1/2 cup Tex Mex EVOO
- 1 onion diced
- 1 bell pepper, diced
- 1-2 jalepenos, minced (optional)
- 1 TBSP chili powder (optional)
- 2-3 cups chicken or veggie broth
- salt and pepper

- Saute onions and peppers in Tex Mex EVOOAdd spices and cook one minuteCombine with cornbread and bread cubesAdd broth and bake 350 for 30-35 minutes
