Olive Oil Mashed Potatoes
Ingredients
- 3 pounds Yukon gold potatoes, peeled and cubed
- 1/2-1/3 cup Garlic or Sweet Cream Butter EVOO
- 1/2-1 cup warm broth, chicken or veggie
- salt and pepper
- Optional: roasted garlic
Instructions
- Boil potatoes until tenderDrain well and mashStir in olive oil, then warm broth until creamy. MashSeason well with salt and pepper
