Moscato Muffins with Marcarpone Blood Orange Filling

Ingredients
  

  • Moscato Muffin Mix
  • 3 tbsp Lemon EVOO*
  • 1 cup Champagne, Moscato or Prosecco
  • 1 egg
  • 1 Mascarpone cheese
  • 2-3 tbsp Blood Orange Balsamic*
  • Meringue vanilla cookies

Instructions
 

  • Prepare muffin mix as directed, except omit the butter and add 3 tbsp Lemon EVOO. Bake as directed
  • Cool muffins. When cooled, cut out a hole in the center
  • In another bowl, combine mascarpone cheese and Blood Orange Balsamic. Place mixture in plastic sealed bag and cut a small corner off to make a piping bag. Pipe mixture into each muffin center
  • Place a meringue cookie on top. Enjoy!
