Mediterranean Flank Steak

Ingredients
  

  • 1 pound Flank Steak
  • 4 TBSP LTO Garlic EVOO – divided
  • 1 tsp Dijon Mustard
  • Salt and Pepper to taste
  • 1 cup Cherry tomatoes
  • 1 cup Fresh Mozzarella balls, halved or use pearls
  • 1 cup basil leaves, chopped
  • 4 TBSP LTO Aged Balsamic Vinegar – divided
  • 1/2 jar Warm Spiced Apple Jam

Instructions
 

  • Mix together 2 TBSP Garlic EVOO, 2 TBSP Aged Balsamic, salt, pepper and mustard to make marinade
  • Place steak in a resealable bag and pour marinade over it. Refrigerate 1 to 4 hours.
  • Heat grill to medium high heat
  • Cook steak for 5-7 minutes per side, depending on how you like it done
  • Let rest for 5 minutes covered with aluminum foil
  • Microwave Apple Jam for 10-20 seconds to soften, brush over steak, slice thinly against the grain
  • Combine cherry tomatoes, mozzarella balls, basil and 2 TBSP garlic EVOO.
  • Arrange steak slices on platter. Top with caprese mixture. Drizzle with remaining Aged Balsamic. Enjoy!
