Lemon Sweet Potato Medallions
Ingredients
- 2 peeled sweet potatoes of various colors cut into 1/4" rounds
- Drizzle of Orange EVOO
- Salt and Pepper to taste
- Goat cheese whipped with some Lemon Balsamic
- Lemon Curd
- Rosemary Sprig
- Candied Pecans – separate recipe on website
Instructions
- Prepare potatoes. Drizzle with oil. Salt and Pepper to taste
- Roast 425 for 25 minutes until tender
- Place a scoop of whipped goat cheese (about 1 TBSP) on top of sweet potatoes
- Top with lemon curd and candied pecans. Garnish with rosemary sprig
