Start by preheating oven to 410
Finely dice the onion and garlic
In a large bowl, combine EVOO, Hot honey, potatoes, garlic, onion and seasonings into a bowl. Stir to coat potatoes evenly.
On a foil lined baking sheet, place the potato mixture. Roast in preheated oven for about 45 minutes, or until they are nicely browned and can easily be pierced with a fork. Turn the potatoes halfway through the cooking time. Enjoy!
Note: This recipe calls for using whole, unpeeled mini Yukon potatoes. If using larger potatoes, we recommend cutting them into smaller pieces and/or adjusting baking time accordingly.
