Curried Tomato Preserves

Ingredients and Method


  • 2 1/2 c. Sugar
  • 1/2 c. Onion, diced
  • 1/3 c. Bottled Lemon Juice
  • 6 lbs. Tomatoes, cored and coarsely chopped
  • 2 Tbsp. Curry Powder
  • 2 tsp. Himalayan Fine Sea Salt
  • 1/4 tsp. Ground Red Pepper


  1. Preserving Method: Water Bath Canning, prepare jars
  2. Makes about 6 half-pint jars
  3. Combine sugar, onion, lemon juice and tomatoes in a 6-qt. stainless steel or enameled Dutch oven. Bring to a boil over medium heat. Cook, uncovered 40 minutes, stirring often. Add curry powder, salt and red pepper. Cook, stirring often, 20 minutes or until the consistency of jam
  4. Ladle hot preserves into a hot jar, leaving ΒΌ-inch headspace. Remove air bubbles. Wipe jar rim. Center lid on jar. Apply band and adjust to finger-tip tight. Place jar in boiling water canner. Repeat until all jars are filled
  5. Process jars 10 minutes, adjusting for altitude. Turn off heat; remove lid, and let jars stand 5 minutes. Remove jars and cool
