Balsamic Gelato (Italian Ice Cream)

Ingredients and Method


  • 3 c. water
  • 1 1/2 c. sugar
  • 2/3 c. Aged Balsamic vinegar of choice
  • 1 tsp. Vanilla extract
  • 1/2-1 1/2 tsp. ground black pepper (start with ½ tsp. and increase, if necessary)
  • 1/4 c. Heavy Cream


  1. Combine water and sugar in a large pan and bring to a boil
  2. Cover and simmer for 5 minutes
  3. Remove the pan from the heat and stir in the balsamic, vanilla and pepper
  4. Cool the mixture to room temperature, then chill for 2 hours in refrigerator
  5. Add the cream to the chilled mixture just before freezing
  6. Pour mixture into an ice cream freezer according to manufacturer’s directions
  7. Transfer gelato to a container and freeze overnight before serving
  8. Use any one of Love That Olive’s fabulous aged dark balsamic vinegars to make this wonderful dessert. At only 80 calories per ½ cup serving you can indulge every night!
