
Moscato Muffins with Marcarpone Blood Orange Filling
Ingredients
- Moscato Muffin Mix
- 3 tbsp Lemon EVOO*
- 1 cup Champagne, Moscato or Prosecco
- 1 egg
- 1 Mascarpone cheese
- 2-3 tbsp Blood Orange Balsamic*
- Meringue vanilla cookies
Instructions
- Prepare muffin mix as directed, except omit the butter and add 3 tbsp Lemon EVOO. Bake as directed
- Cool muffins. When cooled, cut out a hole in the center
- In another bowl, combine mascarpone cheese and Blood Orange Balsamic. Place mixture in plastic sealed bag and cut a small corner off to make a piping bag. Pipe mixture into each muffin center
- Place a meringue cookie on top. Enjoy!
